Dragon's Nest - small round stage, has walls, good lighting, good color (easy to see characters).

Easily Moonlit Wilderness. After that, Poolside and Secret Garden. And also, Playroom, Wolves' Den and Industrial Complex in Tekken 5: DR.

Mines would be Cathedral, Formless Like Water (Waterfall Stage) both of them, Moonlit Wilderness, Ground Zero, Streets, Poolside, Snow Castle, Garden of the Tiger , Galleon both Stage, and Swamp stage

MOONLIT WILDERNESS was my first love. But after being overused, we broke up.
POOLSIDE would be my ALL-TIME favorite stage from Tekken 5 - Nice sunny weather with equally distributed OCTAGON arena and some really nice background music. (sounded like hwoarang's ending soundtrack)
OTHER FAVORITES:

AUTUMN Temple
ACID Rain
PIRATE's Cove
CITY at sunset
SECRET Garden

A tough choice between City At Sunset, Dragon's Nest, Final Frontier, Poolside and Waterfall. I think I'll go with Waterfall due to the relaxing music.
